Chicken Cutlet




This is a Kerala style chicken cutlet recipe  

Ingredients:
  1. Potatoes cooked and mashed - 3 medium
  2. Minced chicken - 1 cup
  3. Onion chopped - 1/2 medium onion
  4. Garlic chopped - 1 tbs
  5. Ginger chopped  - 1 tbs
  6. Green chilli chopped -  2 medium
  7. Coriander powder - 1 tbs
  8. Chilli powder - 1 tsp
  9. Turmeric powder - 1/2 tsp
  10. Garam masala - 1 tsp
  11. Salt to taste
  12. Oil to fry / roast
  13. Oil for sauté - 1 tbs
  14. Bread crumbs - 2 cups
  15. Egg - 1


Method:
  1. Heat oil for sauté in a pan
  2. Add onion, ginger, garlic and green chilli and sauté for 3-4 minutes till the raw smell is gone
  3. Add ingredients from 7 to 11 and sauté for one more minute in medium flame
  4. Add minced chicken to the above and fry it
  5. Once chicken is cooked, add mashed potato to it and mix well
  6. Switch off the flame
  7. Make small balls of cutlet mixture once the mixture reaches room temperature
  8. Flatten the ball and make the cutlet shape
  9. Heat oil in a pan for frying the cutlet
  10. Break the egg to a bowl
  11. Dip the cutlet in egg and then dip it in bread crumbs
  12. Once the cutlet is uniformly coated with bread crumbs, fry it in hot oil till the cutlet is firm and both sides are browned
  13. Repeat the same for the rest of cutlets
  14. Cutlets are now ready to be served

Cutlets can be enjoyed best with ketchup!
